Description

A classic Cobb salad with crispy chicken and a homemade garlic ranch dressing.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups chopped romaine lettuce
  • 2 cups chopped spinach
  • 2 hard-boiled eggs, chopped
  • 1/2 cup crumbled bacon
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup crumbled blue cheese
  • 1/4 cup sliced avocado
  • For the Garlic Ranch Dressing:
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup buttermilk
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried dill
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season chicken breasts with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 2-3 minutes per side until golden brown.
  4. Transfer skillet to the preheated oven and bake for 15-20 minutes, or until chicken is cooked through. Let rest for 5 minutes, then slice or dice.
  5. While chicken bakes, prepare the dressing. In a medium bowl, whisk together mayonnaise, sour cream, buttermilk, minced garlic, lemon juice, dill, salt, and pepper until smooth.
  6. Assemble the salad. In a large bowl, combine romaine lettuce and spinach.
  7. Top the greens with sliced chicken, chopped eggs, crumbled bacon, cherry tomatoes, crumbled blue cheese, and sliced avocado.
  8. Drizzle with garlic ranch dressing just before serving.

Notes

  • For extra crispy chicken, you can dredge the chicken in seasoned flour before searing.
  • If you don’t have buttermilk, you can make a substitute by mixing 1/4 cup milk with 3/4 teaspoon white vinegar or lemon juice and letting it sit for 5 minutes.
  • Adjust the amount of garlic in the dressing to your preference.
