Description
A classic Cobb salad with crispy chicken and a homemade garlic ranch dressing.

- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups chopped romaine lettuce
- 2 cups chopped spinach
- 2 hard-boiled eggs, chopped
- 1/2 cup crumbled bacon
- 1/2 cup cherry tomatoes, halved
- 1/4 cup crumbled blue cheese
- 1/4 cup sliced avocado
- For the Garlic Ranch Dressing:
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup buttermilk
- 2 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 1 teaspoon dried dill
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Season chicken breasts with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 2-3 minutes per side until golden brown.
- Transfer skillet to the preheated oven and bake for 15-20 minutes, or until chicken is cooked through. Let rest for 5 minutes, then slice or dice.
- While chicken bakes, prepare the dressing. In a medium bowl, whisk together mayonnaise, sour cream, buttermilk, minced garlic, lemon juice, dill, salt, and pepper until smooth.
- Assemble the salad. In a large bowl, combine romaine lettuce and spinach.
- Top the greens with sliced chicken, chopped eggs, crumbled bacon, cherry tomatoes, crumbled blue cheese, and sliced avocado.
- Drizzle with garlic ranch dressing just before serving.
Notes
- For extra crispy chicken, you can dredge the chicken in seasoned flour before searing.
- If you don’t have buttermilk, you can make a substitute by mixing 1/4 cup milk with 3/4 teaspoon white vinegar or lemon juice and letting it sit for 5 minutes.
- Adjust the amount of garlic in the dressing to your preference.
