Ingredients

  • 1 cup granulated sugar
  • 1/2 cup water
  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1 can (12 ounces) evaporated milk
  • 1 can (14 ounces) sweetened condensed milk
  • 1 box yellow cake mix
  • Ingredients for cake mix (as per box instructions)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a saucepan, combine 1 cup sugar and 1/2 cup water. Cook over medium heat, stirring until sugar dissolves. Bring to a boil and cook without stirring until amber in color. Pour caramel into a 9-inch round cake pan, tilting to coat the bottom.
  3. In a large bowl, beat cream cheese, softened butter, and 1 cup sugar until smooth.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. In a separate bowl, whisk together milk, evaporated milk, and sweetened condensed milk.
  6. Pour the milk mixture into the cream cheese mixture and mix well.
  7. Prepare the yellow cake mix according to package directions.
  8. Pour the cake batter over the caramel in the prepared pan.
  9. Carefully pour the flan mixture over the cake batter.
  10. Cover the cake pan with aluminum foil. Place the cake pan in a larger baking pan. Fill the larger pan with about 1 inch of hot water (water bath).
  11. Bake for 50-60 minutes, or until a toothpick inserted into the cake comes out clean.
  12. Remove from the water bath and let cool completely on a wire rack.
  13. Chill in the refrigerator for at least 4 hours, or preferably overnight.
  14. To serve, invert the cake onto a serving plate.

Notes

  • Ensure all dairy ingredients are at room temperature for a smoother batter.
  • Be careful when handling hot caramel.
  • Allow ample chilling time for the flan to set properly.
