- 1 pound elbow macaroni
- 1 cup cottage cheese
- 1/2 cup milk
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups shredded cheddar cheese
Instructions
- Cook macaroni according to package directions. Drain and set aside.
- In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
- Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, until thickened.
- Remove from heat. Stir in cottage cheese, salt, pepper, and cheddar cheese until melted and smooth.
- Add cooked macaroni to the cheese sauce and stir to combine.
- Serve immediately.
Notes
- For a richer flavor, you can add a pinch of nutmeg to the cheese sauce.
- Consider adding cooked broccoli or peas for extra vegetables.
