A simple and creamy mac and cheese recipe using cottage cheese for a smooth texture.


Ingredients

  • 1 pound elbow macaroni
  • 1 cup cottage cheese
  • 1/2 cup milk
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese

Instructions

  1. Cook macaroni according to package directions. Drain and set aside.
  2. In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
  3. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, until thickened.
  4. Remove from heat. Stir in cottage cheese, salt, pepper, and cheddar cheese until melted and smooth.
  5. Add cooked macaroni to the cheese sauce and stir to combine.
  6. Serve immediately.
