Description
These cranberry-orange chicken meatballs are a delicious and easy recipe that can be made in under 35 minutes. They are perfect for a weeknight dinner or a party appetizer.

- 1 pound ground chicken
- 1/4 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1 egg
- 2 tablespoons cranberry sauce
- 1 tablespoon orange juice
- 1 teaspoon orange zest
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/4 cup orange juice
- 2 tablespoons cranberry sauce
- 1 tablespoon soy sauce
- 1 teaspoon cornstarch
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine ground chicken, breadcrumbs, chopped onion, egg, 2 tablespoons cranberry sauce, 1 tablespoon orange juice, orange zest, salt, and pepper. Mix well.
- Roll the mixture into 1-inch meatballs.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Brown the meatballs on all sides.
- In a small bowl, whisk together 1/4 cup orange juice, 2 tablespoons cranberry sauce, soy sauce, and cornstarch.
- Pour the sauce over the meatballs in the skillet.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the meatballs are cooked through and the sauce has thickened.
- Serve hot.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the meatball mixture.
- If you don’t have fresh orange zest, you can use 1/2 teaspoon of dried orange zest.
- These meatballs can be made ahead of time and reheated.
