Ingredients

  • 2 cups granulated sugar

  • 1 cup (2 sticks) unsalted butter
  • 1/4 cup unsweetened cocoa powder
  • 1 cup Coca-Cola
  • 1/2 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • For the Frosting:
  • 1/2 cup (1 stick) unsalted butter
  • 1/4 cup Coca-Cola
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1 pound powdered sugar
  • 1 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, sugar, baking soda, and salt.
  3. In a medium saucepan, melt the butter over medium heat. Stir in the cocoa powder and cook for 1 minute, stirring constantly.
  4. Pour in the Coca-Cola and bring to a boil. Remove from heat.
  5. Pour the hot liquid over the dry ingredients and mix until just combined.
  6. In a separate small bowl, whisk together the buttermilk, eggs, and vanilla extract. Add this to the cake batter and mix until smooth.
  7. Pour the batter into the prepared baking pan.
  8. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. Let the cake cool in the pan.
  9. While the cake cools, prepare the frosting. In a medium saucepan, melt the butter over medium heat. Stir in the cocoa powder and cook for 1 minute.
  10. Add the Coca-Cola and bring to a boil. Remove from heat.
  11. Stir in the vanilla extract.
  12. Gradually beat in the powdered sugar until smooth. Stir in the chopped pecans.
  13. Spread the frosting evenly over the cooled cake.
