Ingredients

- 1 tablespoon olive oil
- 1 cup broccoli florets
- 1 (15 ounce) can chickpeas, rinsed and drained
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
- 1/4 cup water
- Cooked rice, for serving
Instructions
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add broccoli florets and stir fry for 3-4 minutes until tender-crisp.
- Add chickpeas and minced garlic to the skillet. Stir fry for another 1-2 minutes until fragrant.
- In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, cornstarch, and water.
- Pour the sauce over the chickpea and broccoli mixture.
- Stir continuously until the sauce thickens, about 1-2 minutes.
- Serve immediately over cooked rice.
Notes
- For extra flavor, add a pinch of red pepper flakes.
- You can substitute other vegetables like bell peppers or carrots.
