Ingredients

  • 1 tablespoon olive oil
  • 1 cup broccoli florets
  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 1/4 cup water
  • Cooked rice, for serving

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add broccoli florets and stir fry for 3-4 minutes until tender-crisp.
  3. Add chickpeas and minced garlic to the skillet. Stir fry for another 1-2 minutes until fragrant.
  4. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, cornstarch, and water.
  5. Pour the sauce over the chickpea and broccoli mixture.
  6. Stir continuously until the sauce thickens, about 1-2 minutes.
  7. Serve immediately over cooked rice.

Notes

  • For extra flavor, add a pinch of red pepper flakes.
  • You can substitute other vegetables like bell peppers or carrots.
