- 2 boneless, skinless chicken breasts, pounded thin
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 large egg, beaten
- 2 tablespoons olive oil
- 1/2 cup marinara sauce
- 1/4 cup shredded mozzarella cheese
Instructions
- Preheat oven to 400°F (200°C).
- In a shallow dish, combine breadcrumbs, Parmesan cheese, oregano, garlic powder, salt, and pepper.
- Dip each chicken escalope into the beaten egg, then coat evenly with the breadcrumb mixture.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear the chicken escalopes for 2-3 minutes per side, until golden brown.
- Top each escalope with marinara sauce and mozzarella cheese.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
Notes
- For extra flavor, add a pinch of red pepper flakes to the breadcrumb mixture.
- Serve with your favorite pasta or a side salad.
