Ingredients
Scale
- 1 tablespoon olive oil
- 1 pound large shrimp, peeled and deveined
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon chili powder
- 1 (10 ounce) can red enchilada sauce
- 8 (6 inch) corn tortillas
- 1 1/2 cups shredded Monterey Jack cheese
- 1/2 cup chopped fresh cilantro
- 1/4 cup chopped green onions
- 1/4 cup sour cream (optional, for serving)
- 1/4 cup salsa (optional, for serving)
Instructions
- Preheat your oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat. Add shrimp, salt, pepper, garlic powder, and chili powder. Cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
- Warm enchilada sauce in the same skillet over low heat.
- Warm tortillas slightly in a dry skillet or microwave to make them pliable.
- Dip each tortilla in the warm enchilada sauce to coat.
- Fill each tortilla with about 1/4 cup of shrimp, 2 tablespoons of Monterey Jack cheese, and a sprinkle of cilantro and green onions.
- Roll up the tortillas and place them seam-side down in a 9×13 inch baking dish.
- Pour the remaining enchilada sauce over the enchiladas.
- Sprinkle the remaining Monterey Jack cheese over the top.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Garnish with extra cilantro and green onions if desired. Serve hot with sour cream and salsa on the side, if using.
Notes
- For extra flavor, you can add a pinch of cumin to the shrimp mixture.
- If you don’t have Monterey Jack cheese, cheddar cheese or a Mexican blend will also work.
- Make sure not to overcook the shrimp, as they can become tough.
