Description

Rich, fudgy brownie bites filled with decadent chocolate truffles.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 ounces semi-sweet chocolate, chopped
  • 1/2 cup heavy cream
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • Cocoa powder for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a mini muffin tin.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt.
  3. In a separate bowl, whisk together the melted butter, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. For the truffles, heat the heavy cream and 1 tablespoon of butter in a small saucepan until just simmering.
  6. Remove from heat and stir in the chopped chocolate and 1 teaspoon of vanilla extract until smooth. Let it cool slightly.
  7. Spoon about 1 teaspoon of brownie batter into each mini muffin cup.
  8. Place a small amount of the chocolate truffle mixture into the center of the batter.
  9. Top with another teaspoon of brownie batter, covering the truffle.
  10. Bake for 15-18 minutes, or until a toothpick inserted into the brownie comes out with moist crumbs.
  11. Let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  12. Dust with cocoa powder before serving.

Notes

  • For an extra rich truffle, use dark chocolate.
  • You can add chopped nuts to the brownie batter for added texture.
  • Ensure the truffle mixture is not too hot when adding it to the batter to prevent cooking the brownie.
