- 2 chicken breasts, diced
- 1 head of broccoli, cut into florets
- 1 red bell pepper, chopped
- 1 carrot, sliced
- 1 garlic clove, minced
- 2 tbsp soy sauce
- 1 tbsp honey or maple syrup
- 1 tbsp rice vinegar or white wine vinegar
- 1 tsp sesame oil
- 1 tsp cornstarch (optional)
- 2 tbsp sunflower or peanut oil
- Black pepper to taste
- Sesame seeds and green onion for garnish (optional)
Instructions
- Marinate the diced chicken with 1 tbsp soy sauce, pepper, and cornstarch. Let sit for 10 minutes.
- Prepare and chop all vegetables and set aside.
- Heat a wok or large skillet, add oil, and cook chicken until golden and just cooked. Remove from pan.
- Add more oil if needed and stir-fry the carrot and broccoli for 2 minutes, then add bell pepper and cook until just tender.
- Add minced garlic and stir for 30 seconds.
- Mix remaining soy sauce, honey, vinegar, sesame oil, and a splash of water (with cornstarch if using) to make the sauce.
- Return the chicken to the pan and pour in the sauce. Stir well and let simmer until sauce thickens and coats the ingredients.
- Serve hot with rice or noodles and garnish with sesame seeds and chopped green onion if desired.

- Tofu or tempeh can replace chicken for a vegetarian option.
- Add chili flakes or sambal for a spicy kick.
- Top with roasted peanuts or cashews for crunch.
