Description

Broccoli chicken stir-fry recipe packed with tender chicken, crunchy vegetables, and a flavorful sauce. Perfect for busy weeknights.


Ingredients

  • 2 chicken breasts, diced
  • 1 head of broccoli, cut into florets
  • 1 red bell pepper, chopped
  • 1 carrot, sliced
  • 1 garlic clove, minced
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice vinegar or white wine vinegar
  • 1 tsp sesame oil
  • 1 tsp cornstarch (optional)
  • 2 tbsp sunflower or peanut oil
  • Black pepper to taste
  • Sesame seeds and green onion for garnish (optional)

Instructions

  1. Marinate the diced chicken with 1 tbsp soy sauce, pepper, and cornstarch. Let sit for 10 minutes.
  2. Prepare and chop all vegetables and set aside.
  3. Heat a wok or large skillet, add oil, and cook chicken until golden and just cooked. Remove from pan.
  4. Add more oil if needed and stir-fry the carrot and broccoli for 2 minutes, then add bell pepper and cook until just tender.
  5. Add minced garlic and stir for 30 seconds.
  6. Mix remaining soy sauce, honey, vinegar, sesame oil, and a splash of water (with cornstarch if using) to make the sauce.
  7. Return the chicken to the pan and pour in the sauce. Stir well and let simmer until sauce thickens and coats the ingredients.
  8. Serve hot with rice or noodles and garnish with sesame seeds and chopped green onion if desired.

Notes

  • Tofu or tempeh can replace chicken for a vegetarian option.
  • Add chili flakes or sambal for a spicy kick.
  • Top with roasted peanuts or cashews for crunch.
