Description
A quick and healthy stir-fry featuring tender bok choy and succulent shrimp.
Ingredients

- 1 pound shrimp, peeled and deveined
- 2 heads bok choy, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 1/4 cup water
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a wok or large skillet over medium-high heat.
- Add garlic and ginger, stir-fry for 30 seconds until fragrant.
- Add shrimp and cook until pink and opaque, about 2-3 minutes. Remove shrimp from the skillet and set aside.
- Add bok choy to the skillet and stir-fry for 2-3 minutes until tender-crisp.
- Return shrimp to the skillet.
- Pour in soy sauce and water.
- Stir to combine and cook for 1 minute until sauce thickens slightly.
- Season with salt and pepper to taste.
- Drizzle with sesame oil before serving.
Notes
- For a spicier dish, add red pepper flakes with the garlic and ginger.
- Serve over rice or noodles.
