Description

A refreshing and vibrant salad featuring sweet blueberries, nutrient-rich spinach, creamy avocado, and tangy feta cheese, perfect for a light meal or side dish.


Ingredients

  • 4 cups fresh spinach
  • 1 cup fresh blueberries
  • 1 ripe avocado, diced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup walnuts, toasted
  • For the dressing: 3 tablespoons olive oil, 1 tablespoon balsamic vinegar, 1 teaspoon honey, salt and pepper to taste

Instructions

  1. In a large bowl, combine spinach, blueberries, avocado, feta cheese, red onion, and toasted walnuts.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, and honey. Season with salt and pepper.
  3. Pour the dressing over the salad.
  4. Toss gently to combine.
  5. Serve immediately.

Notes

  • For a sweeter dressing, add a little more honey.
  • If you don’t have walnuts, pecans or almonds work well too.
  • Avocado is best added just before serving to prevent browning.
