Ingredients

- 4 cups fresh spinach
- 1 cup fresh blueberries
- 1 ripe avocado, diced
- 1/2 cup crumbled feta cheese
- 1/4 cup red onion, thinly sliced
- 1/4 cup walnuts, toasted
- For the dressing: 3 tablespoons olive oil, 1 tablespoon balsamic vinegar, 1 teaspoon honey, salt and pepper to taste
Instructions
- In a large bowl, combine spinach, blueberries, avocado, feta cheese, red onion, and toasted walnuts.
- In a small bowl, whisk together olive oil, balsamic vinegar, and honey. Season with salt and pepper.
- Pour the dressing over the salad.
- Toss gently to combine.
- Serve immediately.
Notes
- For a sweeter dressing, add a little more honey.
- If you don’t have walnuts, pecans or almonds work well too.
- Avocado is best added just before serving to prevent browning.
