Ingredients

  • 1 pound salmon fillet
  • 8 ounces noodles (such as ramen or udon)
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 cup sliced mushrooms
  • 1 cup snap peas, trimmed
  • 2 green onions, sliced
  • Sesame seeds for garnish (optional)

Instructions

  1. Cook noodles according to package directions. Drain and set aside.
  2. In a small bowl, whisk together sesame oil, soy sauce, honey, ginger, and garlic.
  3. Cut salmon into bite-sized pieces.
  4. Heat a large skillet or wok over medium-high heat.
  5. Add salmon to the skillet and cook for 2-3 minutes per side, until lightly browned.
  6. Add mushrooms and snap peas to the skillet. Stir-fry for 3-4 minutes until tender-crisp.
  7. Add the cooked noodles and the sauce to the skillet. Toss everything together to coat evenly.
  8. Cook for another 1-2 minutes until heated through.
  9. Serve immediately, garnished with green onions and sesame seeds if desired.

Notes

  • Adjust soy sauce and honey to your taste.
  • You can substitute other vegetables like broccoli or carrots.
  • For extra spice, add a pinch of red pepper flakes to the sauce.
