- 1 pound salmon fillet
- 8 ounces noodles (such as ramen or udon)
- 1 tablespoon sesame oil
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1 cup sliced mushrooms
- 1 cup snap peas, trimmed
- 2 green onions, sliced
- Sesame seeds for garnish (optional)
Instructions
- Cook noodles according to package directions. Drain and set aside.
- In a small bowl, whisk together sesame oil, soy sauce, honey, ginger, and garlic.
- Cut salmon into bite-sized pieces.
- Heat a large skillet or wok over medium-high heat.
- Add salmon to the skillet and cook for 2-3 minutes per side, until lightly browned.
- Add mushrooms and snap peas to the skillet. Stir-fry for 3-4 minutes until tender-crisp.
- Add the cooked noodles and the sauce to the skillet. Toss everything together to coat evenly.
- Cook for another 1-2 minutes until heated through.
- Serve immediately, garnished with green onions and sesame seeds if desired.
Notes
- Adjust soy sauce and honey to your taste.
- You can substitute other vegetables like broccoli or carrots.
- For extra spice, add a pinch of red pepper flakes to the sauce.
