Ingredients

- 1 head of romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup crumbled feta cheese
- For the dressing: 3 tablespoons olive oil, 2 tablespoons lemon juice, 1 teaspoon Dijon mustard, 1/2 teaspoon honey, salt and pepper to taste
Instructions
- In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, diced cucumber, and sliced red onion.
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, and honey. Season with salt and pepper.
- Pour the dressing over the salad ingredients.
- Toss gently to coat everything evenly.
- Sprinkle the crumbled feta cheese over the top.
- Serve immediately.
Notes
- For extra crunch, add toasted croutons or slivered almonds.
- You can substitute goat cheese for feta if preferred.
- Add grilled chicken or shrimp for a more substantial meal.
