- 1.5 lbs boneless, skinless chicken thighs
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cayenne pepper (optional)
- Salt and black pepper to taste
- 2 tbsp olive oil
- 1 lime, juiced
- For serving: tortillas, salsa, guacamole, sour cream, chopped cilantro, diced onion
Instructions
- In a bowl, combine chili powder, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper.
- Pat the chicken thighs dry with paper towels. Rub the spice mixture evenly over the chicken.
- Heat olive oil in a large skillet or grill pan over medium-high heat.
- Sear the chicken thighs for 5-7 minutes per side, until cooked through and nicely browned. Alternatively, grill the chicken until cooked through.
- Remove chicken from heat and let it rest for 5 minutes.
- Slice the chicken and toss with fresh lime juice.
- Serve the chicken warm with your favorite Mexican toppings and tortillas.
