- 1 cup fresh cherries, pitted and halved
- 1/4 cup sugar
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch
- 1/4 cup water
- 1 pound puff pastry, thawed
- 1 egg, beaten
- Powdered sugar, for dusting
Instructions
- Preheat your oven to 400°F (200°C).
- In a small saucepan, combine cherries, sugar, and lemon juice. Cook over medium heat until cherries soften, about 5 minutes.
- In a small bowl, whisk together cornstarch and water. Pour into the cherry mixture and stir until thickened. Remove from heat and let cool.
- Unfold puff pastry sheets on a lightly floured surface. Cut each sheet into 4 equal rectangles.
- Spoon the cooled cherry filling onto one half of each pastry rectangle, leaving a small border.
- Fold the other half of the pastry over the filling and crimp the edges with a fork to seal.
- Place pastries on a baking sheet lined with parchment paper. Cut a few slits in the top of each pastry to allow steam to escape.
- Brush the tops with the beaten egg.
- Bake for 15-20 minutes, or until golden brown and puffed.
- Let cool slightly before dusting with powdered sugar.
Notes
- You can substitute other berries if fresh cherries are not available.
- Serve warm with vanilla ice cream for an extra treat.
- Ensure cherries are completely pitted to avoid any hard pieces.
